Dry Ingredients:
1 cup rolled oats (not quick cooking)
1 cup whole wheat flour
1/2 cup all purpose flour
1 cup Sweet Best Erythritol
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 tablespoon baking powder
1/2 teaspoon baking soda
Wet Ingredients
1 egg
1 teaspoon vanilla extract
1 large banana mashed
1/3 cup natural peanut butter
1 cup sugar-free apple sauce
2 tablespoons unsweetened apple juice
Instructions:
-Preheat oven to 375 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
-Add dry ingredients to large mixing bowl; whisk to combine.
-Add wet ingredients to a medium mixing bowl; whisk to combine. Stir wet ingredients into dry ingredients.
-Use a medium (2 tablespoon) cookie scoop to place balls of dough onto prepared baking sheet.
-Bake at 375 for 10-12 minutes. You want the cookies light, fluffy, and slightly browned on the edges, but still a little moist in the center when coming out of the oven.
-Allow cookies to cool on pan for 2-3 minutes before
transferring to a wire rack to cool completely.
