Shortbread Tart Cookies

Ingredients:

  • 6 Tbsp. butter
  • 2 cups almond flour
  • 1/3 cup Sweet Best Stevia-Erythritol
  • 1 tsp. freshly grated lemon zest

Instructions:

  1. In a small saucepan, melt the butter. Add the lemon zest, sweetener, and almond flour. Stir until combined fully.
  2. To make the cookies: form a crumb dough into a cylinder.
  3. Then wrap tightly with plastic wrap to compress.
  4. Chill in the refrigerator for 2 hours or until firm.
  5. Slice into 1⁄2-inch thick cookies with a knife.
  6. Place them on a parchment-lined cookie sheet.
  7. Bake in the oven at 350F until firm and golden brown, about 15 minutes.
  8. Cool before removing.
