PB COOKIE SANDWICH
Ingredients:
1 cup unsweetened Peanut Butter
1 tsp. vanilla extract
1/2 tsp. Baking soda
1/2 tsp baking powder
1/4 cup coconut flour
1 tsp. Vanilla extract
1/4 tsp pink Himalayan sea salt
2 eggs
1/2 cup Sweet Best Erythritol
Filling:
1/2 cup sugar free dark chocolate chips
2 Tbsp. Peanut butter
Directions:
- Mix eggs, peanut butter, sweetener, extracts and salt together until smooth.
- Add dry ingredients and mix until combined.
- Scoop with ice cream scoop onto baking sheet and create cross cross fork action!
- Bake for 10min at 350 degrees Fahrenheit. Makes 12 cookies
- For filling, melt chocolate and peanut butter together then fill cooled cookies and drizzle on top! Makes 6 sandwich cookies.
