Chocolate Macaroon Cookie with Coconut

Ingredients:

  • 1 cup almond flour
  • 3 Tbsp. coconut flour
  • 1⁄4 cup cocoa powder
  • 1⁄2 tsp. baking powder
  • 1/3 cup Sweet Best Stevia-Erythritol
  • 1/3 cup unsweetened coconut, shredded
  • 1⁄4 tsp. salt
  • 2 eggs
  • 1⁄4 cup coconut oil
  • 1 tsp. vanilla extract

Instructions:

  1. Combine all the dry ingredients. Add the wet ingredients and mix well.
  2. Roll the dough into small balls and sprinkle with shredded coconut.
  3. Place the dough balls on a lined baking sheet.
  4. Bake at 350F for 15 to 20 minutes.
  5.  Serve.
