Chocolate Chip Muffins

Ingredients:

  • 1⁄2 cup coconut flour
  • 1⁄4 tsp. baking soda
  • 1⁄4 tsp. salt
  • 4 eggs
  • 1/3 cup unsalted butter, melted
  • 1⁄2 cup Sweet Best Stevia-Erythritol
  • 1 Tbsp. vanilla extract
  • 2 Tbsp. coconut milk
  • 1/3 cup Sweet Best Sugar-Free Chocolate, chopped

Instructions:

  1. Preheat the oven to 350F.
  2. Add the coconut flour, baking soda, and salt in a bowl and blend well.
  3. Add the butter, eggs, sweetener, vanilla, and coconut milk to the dry ingredients and mix well. Gently stir in the chocolate chips.
  4. Line muffin tins and fill 3⁄4.
  5. Bake for 20 minutes.
  6. Cool and serve.
