Keto Chocolate Chip Cookie

Ingredients:

1/2 cup unsalted butter, melted 

1 cup almond flour

1/4 tsp xanthan gum

1/4 tsp baking soda

Pinch of salt

6 tbsp Sweet Best Erythritol

1 tsp vanilla

1 egg

58 grams sugar-free chocolate chips

26 grams sugar free chocolate chips for topping

Directions:

  1. Melt the butter in a medium-sized pan. Brown the butter until the color turns to amber and brown specks form at the bottom. Let it cool.
  2. In a separate bowl, mix together the almond flour, xanthan gum, baking soda, and salt. Set aside.
  3. In another bowl, stir together Sweet Best Erythritol, melted butter, vanilla, and egg. 
  4. Add the almond flour mixture to the butter mixture and mix until well combined.
  5. Stir in the 58 grams chopped chocolate chips by hand using a rubber spatula.
  6. Use an ice cream scoop to transfer the dough evenly onto baking sheets. 
  7. Put the remaining sugar-free chocolate chips on top of cookie dough and flatten the dough gently.
  8. Bake at 350F for 12 mins or until the edges and bottoms have browned. 
  9. Let it cool. The cookies will harden a bit as they cool but will remain chewy.
