Fruit Pizza (Alternative)

Fruit Pizza Sugar Cookie base:
1 cup Baking Essentials Almond Flour
1/3 cup Baking Essentials Coconut Flour
1 large egg
1/3 cup powdered Sweet Best Erythritol
1/3 cup unsalted butter softened
1/2 tsp baking powder
2 tsp vanilla extract

Cream Cheese Frosting:
1/2 cup full-fat cream cheese softened
3 tbsp unsalted butter softened
1/2 cup heavy whipping cream room temperature
1/4 cup powdered Sweet Best Erythritol
1 tsp vanilla extract

Toppings:
Strawberries, sliced
Kiwi, sliced
Peaches, sliced
Blueberries (or any other fruits you like)

INSTRUCTIONS

1. Preheat oven to 350F / 180C and line a baking sheet with parchment paper. Set aside.
2. In a large bowl, combine dry ingredients: almond flour, coconut flour, powdered Erythritol, and baking powder.
Use a silicone spatula to incorporate softened butter, egg, and vanilla extract. Mix until a slightly thick but sticky batter forms.
3. Transfer the dough to the baking sheet and flatten it into a large (10 inch) circle.
4. Bake in the preheated oven for 12-15 minutes until golden.
5. Meanwhile, prepare the icing. In a large bowl, add all the ingredients for the icing and beat them using an electric mixer until smooth and creamy.
6. Remove the crust from the oven and let it completely cool.
7. Once the crust is cooled completely, evenly spread the cream cheese filling on top.
8.Decorate with your favorite sliced fruits.
9. Place in the fridge and let it cool for at least 20 minutes before serving. Cut into 12 slices.
