Low Carb Ube Biko
Ingredients:
1 cup Baking Essentials Coconut Flour
6 tbsp psyllium husk
5 tsp ube flavor
4 cans coconut milk
7 tbsp Sweet Best Erythritol
3 tbsp coconut oil
Homemade latik
Instructions:
1. Mix coconut flour and psyllium husk powder.
2. Cook the erythritol and coconut milk on medium heat. When it starts to boil, add ube flavor.
3. Let it boil for 3 minutes then add coconut flour and psyllium husk. Cook on low heat while stirring constantly.
4. Add 1 tbsp at a time of coconut oil.
5. Cook, stirring constantly, for 20 to 25 minutes or until mixture is very thick.
6. Spoon biko into a baking dish and pat down with a lightly greased spatula to even out. Top with homemade latik.
7. Enjoy!

Yield: 9 pieces
Ingredients:
60g Baking Essentials Organic Coconut Flour
46g Baking Essentials Xanthan Gum
210ml Boiling Water
1/2 cup Grated Coconut
1/2 cup Sweet Best Stevia-Erythritol
1/4 cup Toasted Sesame Seeds
Instructions:
1. Combine coconut flour, xanthan gum, and boiling water. Mix well until there are no more lumps.
2. Wet your hands, roll 30g of dough into balls, and flatten it into an oval shape.
3. Cook for 2 minutes, then drain well.
4. Coat the palitaw with grated coconut.
5. Sprinkle with Sweet Best Stevia-Erythritol and sesame seeds.
6. Enjoy!
