Ingredients:
- 6 Tbsp. butter
- 2 cups almond flour
- 1/3 cup Sweet Best Stevia-Erythritol
- 1 tsp. freshly grated lemon zest
Instructions:
- In a small saucepan, melt the butter. Add the lemon zest, sweetener, and almond flour. Stir until combined fully.
- To make the cookies: form a crumb dough into a cylinder.
- Then wrap tightly with plastic wrap to compress.
- Chill in the refrigerator for 2 hours or until firm.
- Slice into 1⁄2-inch thick cookies with a knife.
- Place them on a parchment-lined cookie sheet.
- Bake in the oven at 350F until firm and golden brown, about 15 minutes.
- Cool before removing.
